Chef Thony’s food philosophy

Cafe Costa Rica food should touch your soul. If it doesn’t touch your soul, I’m not doing my job. If you don’t remember me or my food, I’m not doing my job. I’m all about creating memories.

  • Fresh, organic and locally sourced as much as possible.
  • Works out of FEED Kitchens, a shared-use commercial kitchen for food entrepreneurs.
  • Operated Cafe Costa Rica restaurant, which was a brick and mortar restaurant on Butler Street and later Williamson Street. The restaurant was too much for one person to operate alone, and I wanted time to pursue my passion of creating sauces.
  • Cafe Costa Rica Catering allows you to order the food cart menu for at home or special events.

My Story – Who is Chef Thony?

Born on the Caribbean side of Costa Rica, Thony immigrated to the US in 1998 and fell in love with Madison. In 2004, he launched the Cafe Costa Rica food cart to fulfill his dream of being a small business entrepreneur. He added a brick and mortar restaurant of the same name (first on Butler Street, and later on Williamson Street) in order to have a commercial kitchen space for food preparation. Thony closed the restaurant and launched Mango Man Cooks in 2014.
